Eat a Rainbow

A long while back I shared Ten Tips to Eating Healthier. One of the tips was "eat a rainbow". The idea is that if you eat as many different colors of real foods (not popsicles or gatorade) you'll fill up on nutritional power house foods without a lot of calories. Well, yesterday I had 20 different fruits and veggies! No, not full servings of each, but I blended the following into my day as part of a smoothie, sandwich, salad, and snacks. I'm not one of those people who shares every meal with the world on Facebook, but since the average American only eats 3 servings of fruits and veggies a day, I figured I share, in hopes that it might encourage you to see how colorful you can make your plates today. And by the way, kids love to do this too!

  • blueberries
  • goji berries
  • banana
  • cucumber
  • broccoli
  • sweet potato
  • tomatoes
  • red lettuce
  • red onion
  • seaweed
  • jalapeƱo
  • cabbage
  • carrots
  • avocado
  • raisins
  • jicama
  • lime
  • dates
I also had some yummy protein and fats
  • tuna
  • shrimp
  • salmon
  • cheese
  • eggs
  • nuts and seeds
  • olive oil
Not only do I feel good when I eat good, studies show that a diet high in antioxidants from fruits and veggies may even help prevent skin cancer

Oh, and while this may look all high and mighty, I'll be honest and let you know that I ended my day with a bike ride with friends down to Cloud City Ice Cream. Like I always say, everything in moderation. :-)

Taste the Rainbow
As you know, I usually prepare both my breakfast and lunch for the entire week on Sunday. As I was preparing last week's meals, I said to myself, "I should share my colors with Kristin!"

Breakfast Smoothie makin's: Yogurt, spinach, mango, pineapple, apples, green grapes, bananas and aloe vera juice. While there are multiple colors involved....the green of the spinach takes over. My coworkers are horrified!

For my lunches it was a veggie pork stir fry taco style salad: broccoli, red bell pepper, carrots, red onion, shallots, mushrooms, black beans, garlic, lean pork, mexican spices and lettuce.

A filling lunch makes way for a light dinner and minimal snacking. And, resulted in a 2 pound weight reduction!

Hurray for the rainbow! Hurray for Kristin!

Don't know why green smoothies scare your coworkers unless they're just generally white-food eaters. Oh yeah. They probably are, aren't they? :-)
