Nori Salad Dressing

I love me some sushi. The fish, the wasabi, the nori, the pickled ginger. It's all good. I occasionally make my own sushi, but ultimately don't use all the nori sheets in a pack. What to do with the left overs, besides feed them to Ellie? Well, today I made some damn tasty salad dressing with them.

Here's what I used
3 sheets of nori, torn into smaller pieces, maybe 3"x3"
3 tablespoons of mayo
2 tablespoons water
4 tablespoons spicy vinegar (I used the juice from my spicy pickles)
1 tablespoon nutritional yeast
1 teaspoon mushroom soy sauce (you could use Bragg's, regular soy sauce, tamari or omit it all together)

Here's what I did
put it all in the food processor, let it go to town until the nori is shredded down to the size of dried spices, then enjoy!

This dressing is best consumed soon after its creation, but will last in the fridge for several days. It's good on a salad, but I think it would also be good on a Japanese rice bowl, steamed veggies, or as a dip.

Honestly, I never buy salad dressing. Why spend the money when it is so simple to do it yourself. How about you? Any favorites you want to share?

I need a healthy dose of probiotics. Of course, this makes yogurt a morning staple of mine. For my breakfast, I've since made my own version of that sickeningly sweet ambrosia salad. Most of these ingredients I pick up at Trader Joe's. Their goat milk yogurt is the cheapest, I've found.
I make this the night before:

Plus or minus...

1/4 cup frozen mango chunks
1/4 cup frozen strawberries (these were from my garden)
1/4 cup chopped frozen pineapple
1/2 or whole sliced banana
1/4 cup goat milk yogurt
a sprinkle of both chopped walnuts and orange flavored dried cranberries

I combine all the ingredients and refrigerate over night. When the fruit "melts" it adds a little more moisture to the yogurt and thins it out a bit. And, the cranberries are dusted with a wee bit of sugar, giving it some mild sweetness...but, not sickeningly sweet. You can certainly use fresh fruits and of other varieties, to your liking.

Yum! That's sounds great, Christa. You should name it. I love that Trader Joe's sells frozen pineapple, since I've cut canned goods out as much as possible and fresh isn't always an option. Thanks for sharing!
