Judith's Breakfast Cookies

Looking for a portable breakfast to take on the way to work, on a hike in the Gorge, or pre-workout snack? Then this is just the thing! We're calling Judith's Breakfast Cookies because she's the one who brought them to class one day for us all to try. There was a collective "Yummmmm." And then a "Please give us the recipe." So here you go. Thanks Judith!

Judith's Breakfast Cookies
1 c  bran
3 c  rolled oats
3/5 c orange juice
1.5 c unsweetened applesauce
1 Tb oil
1 c honey
1/3 c brown sugar
3 eggs
1 1/2 Tb vanilla
1 Tb orange zest
3 c whole wheat flour
1 Tb baking powder
1 1/2 tsp baking soda
1 c nonfat dry milk
1 c raisins
1 c chopped walnuts

Preheat oven to 375*
Mix together first 10 ingredients--oat bran through orange zest. Set aside for 10 minutes to soak.
Sift together whole wheat flour, baking powder, baking soda.
Add the 1 cup of dry milk to wet mixture, then add the dry mixture. Stir. Then add raisins and walnuts.
scoop 2+ Tb of dough onto prepared cookie sheet. Makes 60 cookies.
Bake for 10-12 minutes
Cool and enjoy!
