For lunch today I made myself a sandwich.
Behold, a marinated tempeh sandwich on multigrain bread with lettuce, avocado, tomato, mayo and dijon. This sandwich took me 5 minutes to prep, if I hadn't toasted it it would have probably taken just a minute and a half.
Just to state, I'm not a nutritionist. I'm not telling you to eat what I eat. Just glean from my posts what you want. The general idea here is to encourage us all to eat healthy in this speedy world we live in. A little imagination, planning and prep goes a long way in our efforts to avoid fast food, junk or skipping meals all together.
