what the trainer eats: marinated tempeh sandwich

OK, I feel kind of weird talking about what's on my plate, but folks around here really do love their eats. And sometimes I make something so quick, tasty, and simple that I think, someone has to know about this! So, this is for you, Kate, the Better-than-bootcamp Campers, and anyone else who wants to share some meal ideas.

For lunch today I made myself a sandwich.

Behold, a marinated tempeh sandwich on multigrain bread with lettuce, avocado, tomato, mayo and dijon. This sandwich took me 5 minutes to prep, if I hadn't toasted it it would have probably taken just a minute and a half.

Just to state, I'm not a nutritionist. I'm not telling you to eat what I eat. Just glean from my posts what you want. The general idea here is to encourage us all to eat healthy in this speedy world we live in. A little imagination, planning and prep goes a long way in our efforts to avoid fast food, junk or skipping meals all together.

Okey-dokey. I do love to eat, so I'm sure this category will grow rapidly! Enjoy.

I had turkey and avocado on dave's killer bread. Next time I go to New Seasons I'm going to give tempeh a try!

Hey Kate. The Turtle Island tempeh is really pretty tasty. They make Tofurkey too but I'm more into tempeh. Let me know what you think.
