recipe: no-bake peanut butter balls

I just went to a cookie party. We all made some to share with the group, but really the plan was to send the bulk of them to soldiers overseas. (You can't just send food items blindly, as the military will throw them out. But a friend has a friend in the military so she can get them to folks who want them and there is a connection between the makers and the receivers.)

Anyway, I made something I guess you could call a cookie. Peanut butter balls. Ridiculously easy, no baking involved, can be made sugar free, wheat free, gluten free. Yet tasty. Honest! People at the party asked for the recipe so I said I'd post this.

No-bake Peanut Butter Balls
1 cup peanut butter (you could use almond butter, cashew butter, etc)
1/4 cup honey
You can throw in your choice of chocolate chips, raisins, coconut. . .

Mix the ingredients, form into small balls (bite size) and roll in crushed graham crackers, cocoa powder, ground flaxseed or nuts or oats. (I rolled mine in crushed chocolate cookies and cocoa powder.)

See! How easy is that!? About 90 calories per ball. They have protein, good fats, folate, and not so sweet you gorge and crash. Enjoy!
