Gingerbread Lara-like bars

I only got turned onto Larabars in the last few months, when Freddy's had them on sale, 10 for $10. The flavor I liked most? Peanut butter cookie. But lately I've been jonesing for gingerbread cookies. Not sure why, but to honor the craving I made another batch of bars tonight. Here's what I came up with:

Gingerbread Raw Bars
1 cup dates*
1/4 cup almonds
1/4 cup walnuts
2 T ground flax seeds
1 tsp fresh ginger chopped and mashed with a mortar and pestle
1/4 tsp vanilla
1/2 tsp molasses
dash of cinnamon
pinch of cloves

dump all the ingredients in a food processor, give it whirl, do a clump test and then divide into 5 balls, hand shape them into mounds, and wrap in wax paper.

This recipe is much more moist than the previous one I made a few weeks ago. I think it's due to the ginger, molasses and vanilla. Feel free to add a few more nuts.
* forgot to mention this in the previous post, but be sure to use whole dates, not chopped ones.

These bars are super easy to make, have real ingredients, are loaded with vitamins and minerals, goods fats, some protein and lots of fiber. IMHO, much better than other energy bars that have tons of added sugars and a long list of weird ingredients. I don't understand how so many of the granola bars out there, made from oats, have no fiber to speak of in them. And the "fruit bars" on the market crack me up. A lot of them remind me of that old Ritz cracker mock apple pie recipe. There's no actual fruit in them! Which reminds me. These bars may be tasty, but a good ol' piece of fruit with a bite of cheese or few nuts will hit the spot just as well. . .and no prep required.

yum, yum! i really like the cashew cookie larabars. you're right - they're the only kind of bars i'm really into. love that they use such natural ingredients. and i love anything with dates! where are you buying yours? any good sources for cheap, good quality dates?
