recipes: curried salmon spread with red onion and walnuts

Seems I have a bit of a curry fetish, don't I? Well, the spices in curry powder are really good for you and I like the flavor, so I add it to a lot of my dishes. Here's a simple, healthy salmon spread that I really like, especially in the summer on a salad or anytime on a sandwich with greens.

Curried Salmon Spread with Red Onion and Walnuts

1 14oz can of WILD salmon, drained
1 T curry powder or to taste
3 T mayo or plain yogurt
2 t tamari, soy sauce or Bragg's
1 small red onion chopped
1/4 cup chopped walnuts

  1. empty can of salmon into a mixing bowl and mash it up, bones and skin and all. The bones are a good source of calcium but a little weird for some folks, so mashing them up a bit hides them.
  2. add the mayo/yogurt, curry powder, tamari and mix it up
  3. add the red onion and walnuts
  4. enjoy on a sandwich, salad, in a wrap or stuffed in a pita
  5. enjoy!
other options: cilantro, pecans, chives, green onions, water chestnuts, celery
