recipe: curried pasta salad with spinach

I've been cutting back on my wheat lately. I'm too hungry, and a bit too lazy, I guess to do an entire elimination diet to see if I have any food sensitivities, so I just cut back a bit on things and see how I feel. I actually feel a bit better, and my seasonal allergy that usually tackles me in the spring, is staying at bay, so maybe I'm onto something.

But occasionally I still want some pasta! I like the brown rice pasta at Trader Joe's. Here's a pasta salad I whipped up last night.


Curried Pasta Salad with Spinach

1 bag pasta (any shape will do. You can go with whole wheat, rice or regular pasta.) *
1/4 C real mayo
3 T apple cider vinegar
2 T tamari
1 T curry powder
1/4 C flax meal**
1/2 bag organic frozen spinach or fresh (thawed if you plan to eat this right away)
1/4 C chopped pecans or walnuts

Boil the pasta, rinse with cool water, drain well
mix all the ingredients, taste, add something if you want, then enjoy!

* I've also done 1/2 rice noodles and 1/2 a bag or pesto tortellini.
** I buy flax seed and grind them in a coffee grinder. Store both the whole seeds and ground in your freezer.

Super simple, has good fats, and very yummy.
